Honey and porcini mushroom biscuits

Ingredients:

  • 250g of type 1 flour
  • 100g of butter at room temperature
  • 1 egg
  • 1/2 teaspoon of baking powder
  • 100g of acacia honey
  • 20g of dried porcini mushrooms
  • 1/2 teaspoon of cinnamon
  • 1 pinch of salt
  •  

Preparation:

  1. Finely grind the dried porcini mushrooms in a coffee grinder or with a mortar until you obtain a fine powder.
  2. In a bowl, beat the softened butter with the honey until you get a smooth cream.
  3. Add the egg and continue mixing.
  4. Incorporate the sifted flour with the baking powder, porcini powder, cinnamon, and salt.
  5. Knead until you get a homogeneous mixture. Wrap in plastic wrap and let rest in the refrigerator for 30 minutes.
  6. Roll out the dough to a thickness of about 5mm and cut out the cookies with a cookie cutter.
  7. Bake in a preheated oven at 180°C for 12-15 minutes until lightly golden.
