Seitan and mushroom stew: a super chic vegan main course!

If you're looking for a chic vegan main course, perfect for festive occasions, this recipe is just right for you! The seitan stew with mushrooms is a light and delicious unique dish, ideal for satisfying all palates.

 

Ingredients

  • 400 g of seitan (wheat meat)
  • 300 g of polenta
  • 250 g of Pleurotus mushrooms
  • 3 carrots
  • 1 potato
  • 1 sprig of thyme
  • 1 stalk of celery
  • 1 shallot
  • 0.5 leek
  • 1 ladle of vegetable broth
  • 2 glasses of red wine
  • 2 tablespoons of extra virgin olive oil
  • Cloves (to taste)
  • Parsley (to taste)
  • Salt and black peppercorns (to taste)

 

Procedure

  1. Clean the carrots and celery, cutting them into small cubes.
  2. Place the vegetables in a pan, add a little vegetable broth, cover, and stew over low heat for 15 minutes.
  3. Add the diced seitan and cook for another 10 minutes, moistening with a little white wine.
  4. Sauté the chopped mushrooms with the chopped shallot and a little oil in a pan.
  5. Add the mushrooms to the stew, adjust the salt and pepper, stir, and continue cooking for another 10 minutes, always moistening with a little wine.
  6. Meanwhile, cook the polenta in salted boiling water, following the package instructions.
  7. Divide the polenta into 6 molds greased with oil and place in the oven at 200°C for 15 minutes.
  8. Unmold the polenta onto plates and arrange the seitan stew around it.
  9. Sprinkle everything with chopped parsley, drizzling with a little extra virgin olive oil.
