Tagliatelle with mascarpone, adjmor mushrooms, and aalmon: a delicious fusion

Ingredients

  • 400 g of fresh homemade tagliatelle
  • 250 g of mascarpone
  • 150 g of smoked salmon
  • Grated Parmesan cheese
  • 1/2 shallot
  • Butter as needed
  • Salt as needed
  • Parsley (optional)
  • Adjmor mushrooms (quantity to taste)

 

Instructions

  1. Remove the mascarpone from the fridge and let it sit at room temperature for about half an hour. This will allow the flavors to develop better.
  2. In a large saucepan, melt some butter and lightly brown the shallot.
  3. Add the salmon cut into strips and cook over low heat for a few minutes, until soft and fragrant.
  4. Pour the mascarpone into the saucepan and let it melt over low heat. Stir well to obtain a velvety cream.
  5. Meanwhile, cook the tagliatelle in plenty of salted water until al dente. Remember to reserve a ladle of cooking water.
  6. Lift the tagliatelle with a slotted spoon and transfer them to the saucepan with the sauce. Gently mix to distribute the cream over each strand of pasta.
  7. Add a ladle of the tagliatelle cooking water to blend everything and achieve the perfect consistency.
  8. Turn off the heat and add two tablespoons of grated Parmesan cheese. If desired, sprinkle with chopped parsley for a touch of freshness.
  9. Serve the tagliatelle with a smile and enjoy every bite!
