The Hericium vegan steak is a surprising dish that combines the texture and flavor of meat with plant-based ingredients. In this recipe, we will replace traditional steaks with Hericium, a mushroom with a delicate and fibrous taste.
We will add a red wine sauce and use a solar oven for sustainable and technological cooking.
Ingredients
- 200 g of fresh Hericium
- 2 tablespoons of olive oil
- 1 clove of garlic, minced
- 1 sprig of fresh rosemary
- Salt and pepper to taste
Preparation
- Clean the Hericium by removing any soil residues and cut into slices about 1 cm thick.
- In a pan, heat the olive oil and add the minced garlic and rosemary.
- Add the Hericium slices and cook over medium-high heat for 3-4 minutes on each side, until golden and crispy.
- Salt and pepper to taste.
Red Wine Sauce
- 200 ml of red wine
- 1 tablespoon of brown sugar
- 1 teaspoon of cornstarch
- 1 tablespoon of vegan butter
Procedure for making the sauce
- In a small pot, combine the red wine and brown sugar. Bring to a boil and let reduce over medium heat until syrupy.
- In a cup, mix the cornstarch with a little cold water and add to the sauce. Stir well until thickened.
- Remove from heat and add the vegan butter, stirring until melted.
Solar Cooking
- Place the Hericium slices on a tray and cover with the red wine sauce.
- Cover with a transparent lid and place the tray in a solar oven.
- Let cook for about 1-2 hours, until the slices are tender and well soaked in the sauce.
